US $ - as far as I know there is no adjustment in terms of exchange rate as there is a post adjustment already there.

I believe local personnel is paid in local currency and that any difference to the dollar is paid by the organization.

As has already been said, they are paid in US dollars - at least for internationally recruited staff - but you can opt for a percentage of your salary to be paid in the currency of the country in which you are working. You can change the percentage twice a year if you want to. I think that locally recruited staff only have the option of being paid in the currency of the duty station, though.

I only have a EUR bank account and they were pretty relaxed in sending me salaries in EUR.

Actually they always pay in $, it's your bank that serves you in €.

They sent it to me from an EUR account themselves, so I assumed they do their conversions internally.

That's good, but you must check with your bank what is more profitable (exchange rate at your bank or exchange rate at UN, in case the earlier option is better, then it's not expensive to open a USD account in parallel).

They do not always pay in USD, there is a concept of "hard currency duty stations" where you are paid in local currency: EU, UK, Switzerland and a few more are such HCDS...

Yeah, the UN recognises some solid currencies at the international scale and can pay you in them; there's the US Dollar, the Euro, the British pound and the Swiss franc, but I'm not sure: are the Japanese yen and the Chinese yuan reminbi part of that list?
